Weekly Meal Plan: July 14th

Hi everyone! I’ve been so busy the last few weeks and haven’t been able to write much. Jonathan passed a very stressful test a couple weeks ago that has been looming over us for months, so we’ve been celebrating and trying to enjoy summer! Summer looks a lot different when you’re an adult with a full-time job, am I right?! Today I wanted to share what our meal plan looks like for this week! I’m thinking of posting our menu every week, just to give you all an idea of what our flexitarian diet looks like! Let me know what you think :)

Monday:

Breakfast- Greek yogurt + homemade lemon curd + granola

Lunch- Vegan pulled pork sandwich

Dinner- zucchini boats with marinara + goat cheese

Tuesday:

Breakfast- Greek yogurt + homemade lemon curd + granola

Lunch- Vegan pulled pork sandwich leftovers

Dinner- Southwest cauliflower stuffed peppers

Wednesday:

Breakfast- Greek yogurt + homemade lemon curd+granola

Lunch- leftover stuffed peppers

Dinner- Tostadas with zucchini + corn +refried black beans

Thursday:

Breakfast- eggs + turkey bacon

Lunch- leftover tostada

Dinner- thin crust pizza (Angelic Bakehouse crust is so good!)

Friday:

Breakfast- eggs + turkey bacon

Lunch- going out!

Dinner- Potato tacos + refried beans + cilantro sauce

Snacks- watermelon, homemade ranch + cucumber, cheeze its!

Whew! as you can see, we cook a lot of our meals at home! On the weekends we usually just eat whatever is left in the fridge. I usually plan our meals on Friday or Saturday, and shop on Sunday. I usually spend an hour or two on Sunday prepping all of the meals, and it saves so much time during the week! Do you meal prep or plan your meals? Let me know in the comments!
